Chicken Fajitas Recipe

  • 1 red pepper
  • 1 medium red onion
  • 2 skinless, boneless chicken breasts
  • 1 tsp. smoked paprika
  • Small pinch of ground cumin
  • 2 limes
  • Extra virgin olive oil
  • Freshly ground black pepper
  • 4 flour tortillas
  • Low-fat natural yogurt or sour cream, to serve
  • Guacamole, to serve
  • Cheddar cheese, to serve

Ingredients for Salsa

  • 1 fresh red chili, to your taste
  • 15 ripe cherry tomatoes
  • Small bunch of fresh cilantro
  • Freshly ground black pepper
  • 1 lime
  • Extra virgin olive oil


Heat a griddle pan to high heat. Halve and de-seed the red pepper. Meanwhile, peel and halve your onion, slicing it and the red pepper into thin strips. Slice your chicken lengthways into strips as well, matching it with the size of your pepper strips. Add all of these ingredients to a mixing bowl and mix them with the paprika and cumin. Squeeze the juice from half of a lime along with a pinch of salt and pepper and a bit of olive oil into the mixture. Make sure all of these ingredients are mixed well and coating the chicken, peppers, and onion strips. Let this marinade for a few minutes.

While chicken is marinating, roughly chop the tomatoes and the cilantro (including the cilantro stalks). Chop your chili finely and add them to the tomatoes in a separate bowl. Add the juice of 1 lime, a bit of extra virgin olive oil, and then incorporate the chopped cilantro.

Put all of your marinated onion, chicken, and peppers onto the hot grill pan using tongs to keep the slices turned frequently. Cook this mixture for about 6-8 minutes or until the chicken is golden and cooked all the way through. Using a heated pan or a microwave warm your tortillas. Place tortillas on dinner plates and serve chicken fajitas with the yogurt or sour cream, cheddar, and guacamole.
